Ingredients: 2 1/2 cups semolina flour; 1/2 cup white rice flour; 1 TB Ener-G, whisked with 3/4 cup water and 2 TB olive oil; 1/4 cup water; extra white rice flour, for dusting; 2 cups of cultured cashew cheese, combined with 2 cups Daiya mozzarella shreds; 1 TB Earth Balance; 1 TB olive oil; 4 shallots, sliced; 4 cloves garlic, thinly sliced; 6-8 crimini mushrooms, sliced; 1/3 cup dry white wine; 1 cup vegetable broth; 1/2 cup walnut halves, slightly crushed; handful of chopped parsley; salt
