Ingredients: 1 Tablespoon coconut oil, and some for brushing on the taquitos; 1 medium onion, finely chopped; 1 chopped up pepper, sweet or hot to taste, minced fine; 1 clove garlic, minced; 2 12.5 oz cans lean beef (or about 2 C of any meat you like, cooked, shredded and seasoned as you prefer.; 1 16 oz. can no-fat refried beans or 2 cups homemade refried beans; 1 C salsa, more for dipping; 2 tsp chili pepper; Salt and pepper to taste; Approximately 25 (6 inch flour or sprouted wheat tortillas) my husband loves the organic sprouted corn tortillas; 2 C shredded cheese: Cheddar, Swiss, Pepper Jack - can be any type you like. I used cheddar today.; Sour cream or other Mexican style salsa or try really thick Greek Yogurt mixed w salsa or enchilada sauce as an optional condiment
