Ingredients: 1 lb. lean ground turkey; 1 large onion (finely diced); 2 tbsp. fresh minced garlic; 2 c. celery (chopped); 2 c. carrots (peeled and chopped); 2 c. green beans (I used Costco organic in the freezer section); 1 large head cauliflower (chopped); 1 28 oz can diced tomatoes, undrained; 1 12 oz can vegetable juice, (can use low sodium original V8); 1 32 oz carton low sodium vegetable broth; 2 c. water; 1 tbsp. parsley; 1 tsp. salt; 1/2 tsp. pepper; 1 bay leaf; 1 c. cooked quinoa
