Ingredients: 2 bone-in center cut pork loin chops (about 1 -- 1/2 lbs) You can also use boneless; 2 Tbsp olive oil; 1 small Vidalia or Maui onion, peeled and chopped; 1 large shallot, peeled and minced; 2 garlic cloves, smashed; 2 ripe peaches, peeled and chopped; for the sauce; 1/4 cup apple cider vinegar; 1/4 cup bourbon; 1 Tbsp dark brown sugar; 1 Tbsp Worcestershire sauce; 1 Tbsp honey; 1 tsp Dijon mustard; juice of 1/2 lemon; 1 tsp salt; 1 tsp fresh cracked black pepper; garnish; fresh parsley, minced
