Ingredients: 2 cloves garlic (peeled); 14.5 ounce can of diced fire roasted tomatoes; 4 ounce can of fire roasted diced green chilies; juice of 1 or 2 limes (to taste); 2 Tbsp extra virgin olive oil; 1 tsp sherry vinegar (more to taste); 1/2 cup minced colorful bell peppers; 1 red or green jalapeno (minced (seeds and all)); 1/4 cup minced red onion; 1/3 cup finely chopped cilantro; salt and freshly cracked black pepper to taste
