Ingredients: 1.5 cups basmati rice ((raw)); 3 cups vegetable stock; 1 tsp extra virgin olive oil; 1 large onion ((finely diced)); 3 stalks celery ((finely diced)); 3 green bell peppers ((finely diced)); 3 cloves garlic ((smashed and minced)); 2 tbsp sage ((finely chopped)); 14 oz vegan sausage ((I used Beyond Meat, but any vegan sausage works here. Break it up into small bits by hand)); 1/2 tsp smoked paprika; 1 tbsp liquid aminos; 1 tbsp Cajun seasoning; Salt to taste; 2 tbsp parsley ((chopped))
