Ingredients: 2 large eggs, at room temperature; 1/2 cup light brown sugar, packed; 2 teaspoons vanilla extract; 2 tablespoons all-purpose flour; 1/2 teaspoon baking powder; 1/4 teaspoon salt; 2 cups quick-cooking oats; 1 cup old-fashioned oats; 2 and 1/2 cups trail mix (use your favorite brand!); For the Chocolate Drizzle:; 8 ounces high-quality semi-sweet chocolate (see post for more on this); 1 tablespoon coconut OR canola oil
