Ingredients: 2 teaspoons salt; 1/2 teaspoon baking soda; 2 1/2 tablespoon water; 1 pound ground pork; 2 teaspoons minced garlic; 1 1/2 teaspoons fresh rosemary (minced); 1/4 ground nutmeg; 1 1/2 teaspoons freshly ground black pepper; 1 tablespoon oil; 3/4 cup heavy cream; 1 pound orecchiette pasta (we like DeLallo, or any small pasta such as shells); 3 teaspoons olive or vegetable oil; 6-8 ounces Crimini mushrooms (trimmed and sliced); 1 large garlic clove (minced); 1 teaspoon fresh rosemary (minced); 1/2 cup dry white wine; 3/4 cup Pecorino Romano cheese (grated (Parmesan is a good substitute)); 2 tablespoons minced fresh parsley; 1 tablespoon lemon juice; Salt and pepper to taste; Shaved parmesan cheese for garnish (optional)
