Ingredients: 3/4 cup creamy or crunchy peanut butter; 1/4 cup butter (or 1/4 cup applesauce, softened); 2/3 cup packed brown sugar; 2 eggs; 1 teaspoon vanilla extract; 1 & 1/3 cups quick-cooking oats or {GF} quick-cooking oats (can also use old-fashioned, or 1/2 & 1/2 quick and old-fashioned oats, depending on texture you like. Add up to 1/4 extra oats for thicker cookies! ); 1/2 teaspoon baking soda; 1/2 tsp baking powder; 1 generous pinch of salt; 1/2 cup semisweet chocolate chips; 1/2 cup M&M's; 1/2 cup additional add-ins like nuts, candies, raisins, etc. ((I used more M&M's and chocolate chips.)
