Ingredients: 6 lbs first cut brisket, (untrimmed); Extra virgin olive oil; 4 onions, diced; 5 carrots, peeled & sliced into 1-inch pieces; 5 celery stalks, peeled and sliced into 1-inch pieces; 10 sprigs thyme; 2 sprigs rosemary; 2 bay leaves; 8 cloves garlic; 1 quart low sodium beef or chicken broth; 2 tsp kosher salt ((you may need to use less salt if using a kosher salted brisket)); 2 tsp black pepper; 1 tbsp potato starch ((optional- you may substitute corn starch if not for Passover)); Fresh chopped parsley ((optional, for garnish))
