Ingredients: 3 eggs; 1 tsp vanilla extract; 2 cups unsweetened applesauce; 1 large banana (mashed); ½ cup honey; 5 cups old-fashioned rolled oats; ¼ cup ground almonds (or ground flaxseed); 1 Tbls ground cinnamon; 1 tsp ground ginger (optional: I love ginger!); 1 Tbls baking powder; 1 tsp salt; 2 cups almond milk; ¼ cup coconut; ¼ cup golden raisins or craisins; ¼ cup sunflower seeds; ¼ cup anything else that sounds good (ahem… chocolate chips, anyone?)
