Ingredients: oil; 1 small onion, diced; 2 small shallots, diced; 2 cloves of garlic, minced; 1 lb lean ground beef; 1/3 cup sriracha; 2 tablespoons soy sauce; 14 ounce bag of your favorite tortilla chips; 1 cup sliced green onions; 3 jalapeños, sliced; 1 red pepper, diced; 1 1/2 cups grated cheddar; 1 1/2 cups grated mozzarella; 1 cup roughly chopped cilantro; sour cream, salsa and guacamole, if desired
