Ingredients: 1/2 cup dried chickpeas; 1 teaspoon baking soda, divided; 2 garlic cloves, unpeeled; 2 tablespoons plus 2 teaspoons fresh lemon juice, or to taste; 1/3 cup Chinese sesame paste; 1/4 – 1/3 cup shiro (white miso); 2 tablespoons ice cold water; 1/8 teaspoon ground cumin; olive oil or toasted sesame oil (to serving); crispy onion furikake, to serve (optional); 1 tablespoon white sesame seeds; 1 tablespoon black sesame seeds; 2 tablespoons crispy fried onions or shallots; 2 tablespoons bonito flakes; 1 tablespoon crushed toasted nori; 1 teaspoon sugar of choice (I used superfine); 1 teaspoon smoked sea salt
